Wonder

S'ASSU — «the stone» in Sardinian. A name that has weight, that recalls the land, the stones that mark the boundaries of the vineyards. Our reds are born here, in Marina di Sorso, at Tenuta Asinara, where the sea and the land meet and Cannonau finds its voice — alone or in dialogue with other grapes. Every bottle is a return to the territory, an invitation to slow down, to let the wine tell its story.

Cannonau DOC is pure, uncompromising: 100% of the same grape, from Tenuta Asinara in Marina di Sorso. Sandy and clay soil, seventy metres above sea level, 5671 vines per hectare, spur-pruned. The harvest is manual, between the third and fourth decade of September — when every berry is ready. Fifty-five quintals per hectare: a yield that speaks of rigour and choice. Here Cannonau finds its most authentic expression.

The maze

In the cellar nothing is left to chance: cooling of the grapes in the cold room, sorting of the clusters, soft destemming, sorting of the berries. Then fermentation and maceration in steel, about fifteen days at 24 degrees — the time needed for colour, aromas and structure to merge. Every step respects what the vineyard has given: blackberry, plum, raspberry, blackcurrant — red fruit waiting only to be revealed.

The landing

In the glass it is intense ruby red. On the nose it is fine and persistent, with red fruit to the fore: blackberry, plum, raspberry, blackcurrant. On the palate a notable acidic backbone supports the high glycerol: soft, fruity drink that echoes the nose, satisfying and persistent finish. Acidity 4.9 g/l, dry extract 29.5 g/l — numbers that tell of a wine with character. Perfect with roasts, braised meats, risottos. Serve between 14 and 15°C.
