Wonder
S'ASSU — «the stone» in Sardinian. A name that has weight, that recalls the land, the stones that mark the boundaries of the vineyards. Our reds are born here, in Marina di Sorso, at Tenuta Asinara, where the sea and the land meet and Cannonau finds its voice — alone or in dialogue with other grapes. Every bottle is a return to the territory, an invitation to slow down, to let the wine tell its story.
A blend designed for balance: 80% Cannonau, Sardinian heart that gives structure and warmth; 10% Merlot and 10% Cabernet Sauvignon, adding roundness and finesse. The grapes ripen in Marina di Sorso, at Tenuta Asinara, between the first and second decade of September — when the sun has done its work and the clusters are ready. Here the salty wind of the coast shapes the vineyards and Cannonau learns to coexist with other voices, without losing its own.
The maze
After the harvest, the path in the cellar: cooling of the grapes, sorting of the clusters, soft destemming. Every step is calibrated to extract the best without forcing. Fermentation and maceration take place in steel, for about fifteen days at 24 degrees — the right time for colour, tannins and aromas to blend in harmony. No rush, no excess: only respect for what the grape has given.
The landing
In the glass it is ruby red, luminous. On the nose strawberry, sour cherry and spices emerge — aromas that invite the first sip. On the palate it is elegant, with notes of red berries and a delicate bitter finish that closes cleanly. It is a table wine, to share: roasts, braised meats, risottos — everything that asks for a sturdy but not overwhelming companion. Serve between 14 and 15°C: the right temperature to bring out every note.
